INGREDIENTS

LOVE TO KEEP IT SIMPLE

FOLLOWING INGREDIENTS MAKES 2 SERVINGS (2 CUPS). ADJUST YOUR MEASUREMENTS ACCORDINGLY â€‹

  • FRESH GINGER-GARLIC CRUSHED- 6 TSP (CAN USE FROZEN CUBES)

  • TOMATO PASTE - 6 TBSP

  • WATER - 3/4 -1 CUP (TOTAL)

  • OIL + BUTTER - 1 TBSP EACH OR 2 TBSP OF EACH (YOUR PREFERENCE)

  • SUGAR OR HONEY - 1-1.5 TBSP

  • CREAM (OR HALF AND HALF)-1/4-1/3 CUP

  • MASALA MATTERS 'BUTTER UP MY CHICKEN BLEND- 2 TBSP

  • CHICKEN BREAST- 2 (MEDIUM)CUT INTO BITE-SIZED PIECES

  • SALT TO TASTE

  • OPTIONAL -CILANTRO FOR GARNISH 

Do's and Don'ts

READ THE FOLLOWING.. I PROMISE IT IS NOT A STORY AND IS VERY IMPORTANT.

  • Use peanut or canola. Vegetable oil works too. DO NOT use coconut oil.

  • DO NOT use bottled or powdered ginger and garlic. It's a NO-NO

  • You need some kind of sweetness to this dish. If you are using an artificial sweetener, please make sure you do not sweeten it too much. 

  • I prefer using a total of 1/2 cup of water but if you like more gravy, please feel free to add another 1/4 cup.

  • DO NOT use parsley instead of cilantro. They are similar but this is not Italian food!!! It will change the flavor of the dish.

  • Tofu is a great option for chicken. Same recipe- just opt for tofu instead of chicken. Tofu will use lesser cooking time of course.

SUPER EASY COOKING DIRECTION 

Cooking direction

  1. HEAT OIL + BUTTER IN A MEDIUM-SIZED SLIGHTLY DEEP PAN. 

  2. ADD CRUSHED GINGER- GARLIC AND COOK UNTIL FRAGRANT (20 SECS APPX)

  3. ADD TOMATO PASTE  + 1/4 CUP WATER AND BLEND IT INTO SMOOTH PASTE. COOK FOR ANOTHER 1 MIN STIRRING CONSTANTLY.

  4. ADD MASALA MATTERS 'BUTTER UP MY CHICKEN BLEND' + 1/4 CUP WATER AND BLEND THE MASALA WELL WITH THE TOMATO MIXTURE. COOK THIS FOR ANOTHER 2-3 MINS ON LOW MEDIUM HEAR STIRRING CONSTANTLY.

  5. ADD CHICKEN AND SALT. MIX WELL WITH THE TOMATO-MASALA MIXTURE. ADD 1/4 CUP WATER.

  6. COVER AND COOK FOR 12-14 MINUTES ON LOW-MED HEAT STIRRING FREQUENTLY OR UNTIL CHICKEN IS COOKED THOROUGHLY.

  7. ADD CREAM OR HALF AND HALF. STIR WELL

  8. ADD SUGAR OR HONEY. STIR WELL

  9. GARNISH WITH CILANTRO AND A DASH OF BUTTER. ALTHOUGH IT IS OPTIONAL, I HIGHLY RECOMMEND IT!
